Discover the purest essence of the olive grove in a 2.5 L tin with our Oro de Cánava Early Harvest Extra Virgin Olive Oil. Made from 100% Picual olives harvested in October, this low-acidity oil (0.1%) retains all its organoleptic nuances thanks to immediate cold pressing after harvesting.

  • Origin and production:
    Variety: 100% Picual.
Early harvest: Hand-picked in October, when the fruit reaches its optimal early ripeness, ensuring a high polyphenol and antioxidant content.
Cold pressed: Extracted in our own mill using temperature-controlled centrifugation (below 27 °C) to preserve aromas and healthy properties.
Acidity: 0.1%, reflecting impeccable raw material and the best extraction practices.
Format: 2.5 L metal can with a protective inner coating that prevents oxidation and filters light, ensuring maximum preservation of aromas.
  • Color and appearance:
Tone: Intense green with subtle golden reflections that evidence a quality olive.
Appearance: Clean, slightly dense, with a delicate natural aftertaste that shows its unrefined extraction.
  • Aroma and flavor:
Nose: Herbaceous notes of freshly cut grass and olive leaf, accompanied by green fruity nuances (green apple, ripe banana) and an almond and floral background.
Palate: Smooth and velvety entry with light bitterness and very slight spiciness, characteristic of early harvest Picual. Fresh green olive sensation, persistent finish with hints of artichoke, tomato and wild herbs.
Organoleptic profile: Balanced between power and delicacy, with an enveloping texture that covers the palate without being heavy.
  • Uses and pairing:
Raw: Perfect for fresh salads, roasted vegetables, carpaccios and artisan bread. It enhances gazpachos, salmorejos and hummus for its just right bitterness and spiciness.
Cooking: Suitable for mild stir-fries, sautéed vegetables and light fish stews. Withstands moderate frying (smoke point ≈ 210 °C), ideal for garlic or vegetable confit.
Haute cuisine: Excellent for finishing delicate dishes: vinaigrettes, emulsions, seafood carpaccios or white meats, and to give a distinctive aromatic touch in avant-garde creations.
  • Storage:
Place: keep the can in a cool place (< 20 °C), dry and away from direct light.
Closure: Keep tightly closed to avoid contact with oxygen and to preserve the fruity nuances.
Shelf life: Best consumed within 18 months after harvest (October), thus ensuring maximum enjoyment of its antioxidant properties and freshness.
