Made from 100% Picual olives harvested in October, this oil is produced using cold pressing and guarantees exceptionally low acidity (0.1%), reflecting its unrivalled quality.

  • Origin and production:
    • Variety: 100% Picual.
    • Harvest: Early harvest in October, when the olives are not yet fully ripe, thus preserving a high content of polyphenols and antioxidants.
    • Cold pressing: Produced in our own mill by centrifugation at a controlled temperature (below 27 °C) to preserve all organoleptic nuances.
    • Acidity: 0.1%, an indicator of the highest quality and freshness.
    • Format: 500 ml glass bottle that protects the oil from light and preserves its properties unchanged.
  • Colour and appearance:
    • Colour: Intense green with golden highlights.
    • Appearance: Clear and slightly viscous, with a delicate natural sediment indicating cold pressing without refining.
  • Aroma and flavour:
    • Nose: An explosion of herbaceous aromas reminiscent of freshly cut grass and olive leaves, with green fruit notes (green apple, ripe banana) and light almond and floral nuances.
    Palate: Smooth and balanced entry: slight bitterness and very subtle spiciness characteristic of early harvest Picual. Fresh sensation of green olive, persistent finish with light notes of tomato, artichoke and wild herbs.
    Organoleptic profile: Perfect balance between power and delicacy, with a slightly enveloping texture that coats the palate without being heavy.
  • Uses and pairing:
    Raw: Ideal for dressing fresh salads, grilled vegetables, carpaccios and artisan bread toast. Enhances gazpachos, salmorejos and hummus thanks to its perfect balance of spiciness and bitterness.
    Cooked: Perfect for light stir-fries, sautéed vegetables and fish stews. Its moderately high smoke point (≈210 °C) makes it suitable for gentle frying and confit cooking.
    Haute cuisine: Recommended for finishing delicate dishes: emulsions, vinaigrettes, fish or meat carpaccios, and reductions. It adds a distinctive aromatic touch to avant-garde dishes.
