This ham comes from the hind legs of Iberian breed pigs. The pigs used to produce this product have been raised extensively, grazing freely in pastures, during the “montanera” (approx. from September to February) the animals were fattened exclusively on acorns and what the countryside offered them, and they acquired a minimum weight of 70 kg by practicing this natural diet. It has been cured in a natural drying room for a period of no less than 24 months (depending on weight), where the climate and environmental fungi dry it and give it its flavor nuances.
