Like the field-fed hams, these shoulders come from Iberian breed pigs raised in a semi-extensive regime based on cereals. The animals have a mixed feed of cereal and natural feed, so the pieces are qualified as field bait. The piece is subjected to a traditional and totally natural salting and drying process that gives it an intense and characteristic aroma, thanks to the wood dryer that acts as a regulator of humidity and temperature.
